Omelette Pizza with Greens & Bacon Bites

Ingredients (Serves 1)

  • 2 eggs (room temperature)
  • Bacon slices
  • Yellow zucchini
  • Any leafy green vegetable
  • Cheese (your choice, shredded)
  • Tomato sauce
  • Garlic (minced)
  • Fresh parsley (chopped)
  • Olive oil, salt, pepper, paprika

Step-by-step Instructions

  1. Bake the bacon at 180°C until crispy (around 10 minutes, depending on your oven). Once cooled, chop into bite-sized bits.
  2. Slice the zucchini and marinate with olive oil, salt, pepper, and paprika. Lay them flat on a baking tray and bake until lightly browned. (You can also pan-fry if no oven.)
  3. Prepare vegetables:
    • Slice leafy greens (separate stems from leaves)
    • Mince garlic and chop parsley
  4. Arrange zucchini around a serving bowl like a flower. (This will hold the cooked greens.)
  5. Beat 2 eggs, preferably at room temperature so they’re easier to whisk.
  6. Stir-fry the greens:
    • Cook only the leaves first with olive oil
    • Place cooked leaves into the zucchini bowl
    • Heat tomato sauce and spoon some over the greens
    • Reserve remaining sauce for omelette
  7. Stir-fry veggie stems with garlic in the same pan. When fragrant, pour in beaten eggs.
  8. Let the omelette set and gently flip once cooked underneath.
  9. Spread tomato sauce over the top of the omelette, add cheese, and cover the pan for 3 minutes to melt the cheese. Turn heat to low to avoid burning.
  10. Plate the omelette, sprinkle with bacon bits and fresh parsley. Serve immediately.
